So after a great deal of neglect, my ‘Mind, Body, Soul’ section of this blog is back in swing! This section will document different dishes I make with recipes, workout up dates, books I have read, as well as other things that help to feed the mind, body and soul.
Hope you enjoy this re-addition to my blog (“,). Today’s dish (I actually made this today) is a simple homemade smoked salmon salad, with homemade salad dressing.
Ingredients:
Salad Dressing
- 1 -1/2 Tablespoons Olive Oil
- 1 Tablespoon Fresh Lime Juice (or Lemon)
- Sea Salt
- Ground Black Pepper
- Garlic Granules
- Mint
Salad
- 4 x Cherry Tomatoes
- 2 x Spring Onions
- Bowl of Green Leafs
- 2 x Eggs
- Half a Chilli Pepper
- 50g Smoked Salmon



Instructions
- Put eggs on stove to boil
- Whisk lime juice and olive oil together to
- Add black pepper, sea salt, mint and garlic to taste
- Continue whisking for a minute or so and then leave to stand.
- While eggs are boiling, chop tomatoes, spring onions and chilli
- Shred Smoked Salmon
- Wash Green Leaves
- Toss , green leaves, tomatoes, chilli and spring onion up together in a bowl
- Remove eggs from stove and run directly under cold water for a few minutes (this makes it easier to remove the shell)
- Peel eggs and chop in half
- Pour salad into your desired serving dish
- Add smoked salmon to the top
- Add eggs
- Sprinkle some black pepper
- drizzle desired amount of your salad dressing
